Recipe Corner: Zebra Popcorn

This is a recipe for a delicious snack like no other- popcorn covered with chocolate and marshmallow!

                               

Tried this while in Arizona with a dear friend. Unfortunately, zebra popcorn isn't sold in Canada so I just had to make it myself! Apparently the original recipe is caramel corn topped with dark chocolate and drizzled with white chocolate. That's delicious but I decided to try my own take on it! Hope you like it :)

Ingredients:
- 1 1/2 cups chocolate chips (or bakers chocolate)
- 1 cup marshmallows
- butter
- one bag of popcorn or 7 cups popped corn (recipe works best with unsalted/ unbuttered popcorn)

Materials:
- double boiler OR saucepan with glass bowl
- cookie sheet or large plate

1. Pop the popcorn and place on a cookie sheet

2. This step may take a few tries if you're not a pro double-boiler (I'm definitely not!) Use double boiler or improvised one to melt chocolate and dollop of butter until it is soft enough to pour. I used these instructions. After numerous unsuccessful tries with double-boiling, I just zapped the chocolate in the microwave for 30 seconds.
Chocolate has very low boiling point so keep a close eye on it and DO NOT boil water if using double-boiler.. just a low temperature will do it!
Don't worry if you burn a bit of chocolate- I found a use for it!



3. Immediately after melting chocolate, pour over popcorn evenly. I used a spoon to help it cover the popcorn more evenly.

4. Repeat step 2 with marshmallows. If you've ever made Rice Krispie Squares, it's basically the same deal! Again, you may choose to use the microwave ;)

5. Immediately pour molten marshmallows over popcorn. Sprinkle any hardened burnt chocolate over popcorn.


6. Let cool for ~10 minutes in fridge

7. Enjoy with family and friends!

8. Repeat steps 1-7 as often as needed


This snack is great for after school munchies, or enjoying in front of your favourite movie.
